Coffee – Not Just a Tasty Drink

Does a cream-capped cappuccino put a smile on your face?  A frothy latte leave you feeling fab? The zing of an espresso kick-start your morning? If you love your coffee then a cup of your favourite blend no doubt offers a great boost to your day. Yes, we like to drink our coffee but how about nibbling on it too?

There are some great recipes out there and we’re not just talking coffee cake (scrumptious as it is). Why not use your favourite blend to whip up a healthy treat?

Coffee Protein Balls

Coffee can give you an energy boost, so a coffee protein ball or two prior to a workout could be a great way to set yourself up for a good session. Even if you are not on the fitness trail, snack on a couple of these instead of dipping into that sugar laden biscuit tin. If you want to have a go at making coffee protein balls for yourself you will need 100g almonds, 175g dates, 1 tbsp almond butter and 1 tbsp coconut butter and of course 2 tbsp of your fabulous vitamin coffee. Drag your food processor out from the back of your cupboard (it’s a great kitchen aid and will save you a heap of time), and start by blending the almonds, then add everything else and blend again. Then simply roll your mixture into little balls and pop in the freezer until they set (about an hour should do). You don’t even have to switch on your cooker! Your little balls of coffee energy will stay fresh if you store them in a bag in the fridge, just help yourself when you need a bit of a pick-me-up.


Coffee & Chia Brekkie Treat.

We’ve heard of the health properties associated with the hippest superfood on the block - chia seeds, so how about combining them with tasty coffee (and a bit of cocoa for an extra treat)? You will need 2tbsp chia seeds, 2 tsp coconut palm sugar (this is thought to be healthier than granulated or brown, but you could use either as an alternative if you prefer), ½ tsp of cocoa, ½ tsp of cinnamon, ½ cup almond milk and ½ tsp vitamin coffee. Add everything to a cup and give it all a good stir, pop in the fridge for ten minutes then take it out and give it another good stir.

Then pop it back into the fridge overnight ready for a yummy breakfast the next morning. When you get up simply top your morning pud with frothy milk or a few spoons of yoghurt. Yum!
